Camping Coffee Can Casserole
1 pound ground beef
4 small carrots; peeled and sliced thin
4 small potatoes; peeled and sliced thin
2 small onions; peeled and sliced thin
salt and pepper
coffee can (3 pound)
In a clean and empty 3 pound coffee can, place in layers, beef, potatoes, carrots, onions, salt
and pepper until ingredients are used. Cover can with foil and cook in campfire or on campfire
for 30-60 minutes, depending on heat of fire.
2 large Trout fillets
8 seedless grapes, halved
4 slices yellow bell pepper
4 large mushrooms, sliced
2 tablespoons olive oil
8 leaves fresh tarragon, chopped
Salt & pepper to taste
2 large pieces of foil
Place trout fillets on pieces of foil. Drizzle with olive oil and season with salt & pepper.
Distribute equal amounts of grapes, bell pepper, mushrooms and tarragon on trout. Seal package
tightly and place in campfire, on grill or in oven for 3 - 4 minutes. Unwrap and serve.
